Hello and welcome to The Nightly Dish! I am not a chef by trade, only by heart. I have no formal training. My only lessons took place in a small galley style kitchen where my mother reigned as queen. Those early years of cooking were rough. I didn't think I would ever make it through. But I did and I can say with strong certainty that my cooking today would not be what it is without going through what it did.
I've toyed with the idea of writing a cookbook filled with my recipes, but who has the time for that? Do you know how long it took Julia Child to write and publish her first cookbook? Years! Nearly a decade! I want to share my dishes with everyone now, not years from now. So, here I am writing a blog about cooking and I'll only have to wait as long as it takes me to post a recipe to share my love of cooking with all of you.
It will depend on you, my readers, what will come of this blog. If the demand is high and people are starving for my recipes, the blog will be updated more frequently. Otherwise, I will post at my leisure.
My recipes will include a complete meal so there'll be no need to guess what to make with what, which can sometimes be a challenge by itself. My hope is to take the guesswork out of cooking, to assist those in the kitchen with the knowledge I've gained through years of trial and error.
So, pull up a chair, pour yourself a cup of coffee or if the mood strikes, a glass of wine. Grab a pen and a recipe card and let's start cooking!
